When life gives you lemons 🍋 turn them into lemon tarts with MicroGarden’s pie moulds

INGREDIENTS
2x sheets shortcrust pastry, defrosted
1 cup condensed milk
1 egg
1 tsp vanilla essence
1 lemon

METHOD
1. In a bowl add the condensed milk, egg and vanilla essence.
2. Squeeze the juice of the lemon into the bowl and stir until all mixed through.
3. Place your seed and sprout air fryer mini pie moulds onto the pastry and cut around them.
4. Once you have the cut out moulds, place the pastry into each mould.
5. Fill the moulds with the condensed milk mixture and top each one with grated lemon rind from the lemon you used earlier.
6. Carefully place the moulds into the air fryer at 180 degrees and approximately 6-8 minutes. (Keep checking just to make sure you don’t burn them)
7. Take them out once the tops are bubbling and golden.
Serve straight away or save for a special occasion-these are going to be a crowd favourite.

Fresh Lentil Salad (Serves 2–3)

A light, protein-packed dish that works as a main or a perfect side.

Ingredients
• 1½ cups cooked lentils
• 1 cup fresh parsley, finely chopped
• 2 tbsp fresh mint, chopped
• ¼ cup red onion, very finely chopped
• ¼ cup seedless tomato, small dice
• ¼ cup cucumber, small dice

Dressing
• ¼ cup extra-virgin olive oil
• Juice of ½ lemon
• 1 tsp salt
• ½ tsp ground cumin

Method
Mix all salad ingredients in a bowl.
Whisk dressing ingredients separately.

PEANUT CHILI OIL NOODLES - my favorite dish!
Ingredients:
-hand-cut thick noodles (or any noodles you like)
-peanut butter
-chili flakes (optional)
-cup fresh green onion, sliced
-sesame seeds
-garlic cloves, minced
-chili oil crisp
-rice vinegar
-dark soy sauce
-neutral oil (I use avocado)
-reserved pasta water (optional)
-More sliced green onion, for garnish
Instructions:
1. Boil your noodles in salted water and take them out about 30 seconds early so they can finish soaking up the sauce later. Save a bit of pasta water (!!) then rinse the noodles so they don’t fuse together like overexcited besties at a reunion.
2. In a cold pan, toss in peanut butter, chili flakes, green onion, sesame seeds, garlic, one tablespoon of chili crisp, rice vinegar, and dark soy sauce. No heat yet... we’re building flavor first.
3. Heat one third cup of neutral oil until it’s dangerously hot... like “step back and pray for your eyebrows” hot.
Carefully pour it over the cold ingredients and listen to that ASMR sizzle. Give it all a good stir.
4. Add your noodles and toss until they’re completely coated and glossy. If you want that restaurant-level silkiness, turn the heat to medium low and mix in a splash of your saved noodle water.
5. Kill the heat, hit it with extra green onion, a spoon of chili crisp, and voila !

Tired of chemicals going down the loo? Me too — so I made toilet bombs! They’re cheap, easy and actually fun to make.
Recipe: 1 cup bicarbonate soda • ¼ cup citric acid • 30–40 drops of your favourite essential oil.
Method: Mix the dry ingredients, then spray 1–2 short bursts of water at a time (don’t over-wet — you don’t want fizz!). Keep mixing and misting until the mix just starts to clump. Press into silicone moulds and leave to dry for 24 hours in a cool, dry place out of direct sunlight. Pop them out, store in a glass jar. Use one per clean — drop in the bowl, let it fizz, then wipe or brush as usual. No harsh chemicals heading to our oceans. 🌍💚

Why eat boring zucchini when you can turn it into pasta AND pesto? 🤩
Honestly… making this is a piece of cake!

Recipe (2 servings | 35 min prep)
Zucchini Pasta:
• 750g zucchini (one big one)
• Chop and fry in a little olive oil until softened
• Add half to a food processor
• Add 250g flour (start with 200g and add as needed)
• Pinch of salt
• Blend until it forms a dough and set aside

Zucchini Pesto:
• Remaining cooked zucchini
• A handful of nuts
• Basil
• Salt & pepper
• A glug of olive oil
• Blend until smooth

Bring a pot of water to the boil.
Cut the dough into the pot using scissors.
When the pasta floats to the top, it’s done!
Toss with the pesto and serve. 💚
